Nazwy sprzętów kuchennych w gwarach Krajny Część I. Przygotowywanie pożywienia

Abstract

Jednym z (peryferyjnych) subpól tematycznych, sytuujących się w granicach pola kulinaria, są sprzęty kuchenne. Celem artykułu jest kilkupłaszczyznowa – semantyczna, genetyczna, formalna oraz geograficzna – charakterystyka 80 krajeńskich kulinaryzmów, desygnujących dawne i współczesne drobne artefakty służące do przygotowywania pokarmów. Przedmiot opisu stanowi leksyka wyekscerpowana z atlasów gwarowych, (popularno)naukowych i amatorskich opracowań leksykograficznych, a także regionalnych książek kucharskich, prezentujących językowe i kulturowe dziedzictwo Krajny. Przeprowadzona analiza wykazała, że do kategorii najliczniej reprezentowanych w obrębie badanego słownictwa należą: (a) nazwy naczyń kuchennych [46,3%], (b) jednostki rodzimej proweniencji [55%], (c) struktury motywowane słowotwórczo proste afiksalne [53,8%] oraz (d) leksemy występujące wyłącznie w mowie Krajniaków (dyferencyjne w stosunku zarówno do języka ogólnopolskiego, jak i innych gwar ludowych) [45%].

Kitchen equipment is included in one of the (peripheral) thematic subfields within the field of the culinary arts. This paper aims at a multi‑ level – semantic, genetic, formal and geographical – profile of eighty Krajna culinary terms that designate past and contemporary small artefacts used for preparing food. The focus is on the terms excerpted from dialectal atlases, (popular) science and non‑ professional lexicographic studies, as well as regional cookery books showing the linguistic and cultural heritage of Krajna. The analysis demonstrated that the categories most frequently represented in the investigated vocabulary include the following: a) names of kitchen vessels [46.3%], b) units of native origin [55%], c) word formation‑ driven simple structures (affixal structures) [53.8%]; d) lexemes occurring exclusively in the speech of the people of Krajna (that are differential in relation to both the standard Polish language and other regional folk dialects) [45%].
